Domaine Jean Bourdy is a winery with a rich winegrowing history and tradition. Its origins date back to the end of the 15th century, and today the winery is run by Laura Bourdy, the sixteenth generation of winemakers in the family and the daughter of Jean Francois Bourdy, who was the driving force behind applying biodynamic principles. They grow ten hectares of vineyards in a biodynamic way in the idyllic Jura village of Arlay, and have held a Demeter certificate since 2006. They are known for their large cellar, where they keep an extensive collection of old wine vintages, some of which date back over 100 years. Stylistically, they produce several recognizable Jura wines \u2014 red wines from the local Trousseau, Poulsard, and Pinot Noir varieties, and white wines from the Chardonnay and Savagnin varieties. Among the most cherished and famous are certainly the Vin Jaune and Chateau Chalon wines , which are produced from the Savagnin variety and known for their unique production process, which includes long-term aging in old oak barrels under a layer of lees called \u201cflor\u201d or \u201cvoile.\u201d The result is long-lived wines <\/span>infused with the extremely complex aromas of salt water and nuts.
