Description
As the winemaker himself says, this white wine carries a subtle Burgundian elegance. Ripe notes of yellow stone fruit, balanced acidity, gentle creaminess on the palate, lovely depth and a long finish.
Wabi-Sabi is not a style, but a mindset. Low-alcohol wines, honest and unadorned, made with minimal intervention. Grüner Veltliner and Riesling grapes are hand-harvested right at the edge of ripeness, quickly processed, and then aged for at least a year in old wooden barrels. Everything moves at its own pace, resulting in wines that are quiet, pure, and unpretentious – just like the philosophy their name reflects.
