The Posestvo Burja estate is a blend of traditional Vipava with a modern understanding of wine. It is in the hands of the dedicated Lavrenčič family, which cultivates its 10 hectares of vineyards in a biodynamic way. Primož’s wines have become a symbol of quality, tradition, and purity of natural wines. On the one hand, it emphasizes the importance of preserving biodiversity and soil health through sustainable viticultural practices. On the other hand, it uses science in the cellar with respect, striking a balance between nature and innovation in the service of creating a premium wine. Therefore, he opted for the path of minimal intervention. Apart from the temperature, he does not control any of the processes in the cellar. It is important to enable nature to express itself through wine, which is why a rich microflora and spontaneous fermentation are the key to achieving complexity and uniqueness.
