The founder of the Wabi-Sabi winery, Franz Hofstätter, is a wine marketing and sales expert who has been active in the industry for over 20 years, representing Austrian winemakers all over the world. But Franz’s first love has always been wines. Therefore, he decided to rent several vineyards in the Wachau region, in which cultivation occurs in accordance with ecological principles, and his approach to work is best described by the Japanese “Wabi-Sabi” philosophy, after which the wines were named. Accepting nature in its true form, with all its imperfections, is the antithesis of today’s technology-driven world that strives for measurable perfectionism. It is precisely the recognition of beauty in these imperfections that defines Wabi-Sabi wines. Although he refrains from interfering with natural processes, Franz is aware of how much he himself is part of the terroir and in which manner each of his decisions affects the final product. His wines are clean and clear, with beautiful vertical acids and minerality, perfect ambassadors of the Wachau region on the one hand, as well as the beauty of natural winemaking on the other.
