The Mlečnik family has been engaged in winemaking and viticulture for more than 200 years. Since 1986, the farm has been run by Valter Mlečnik, and in 1989, they had their first bottled harvest. The vineyards are located on the slopes of the Bilje hill, in the villages of Bilje and Bukovica, and they grow five varieties—Malvasia, Tokaj, Rebula, Chardonnay, and Merlot. The entire work is focused on ensuring minimal stress of the vine, the revitalization of the soil, increasing the natural resistance of the plant, and small yields. All this requires a lot of presence and manual work, and the ultimate goal is to preserve the richness of microflora in the vineyard. Once the grapes reach the cellar, they undergo a maceration process, which lasts three to seven days for white and ten to fourteen days for red wines. After two years of aging in large wooden barrels without any intervention, the wines are bottled and aged for an additional two to three years in the bottle. Mlečnik delivers elegance, consistency, and quality.
