Microbio natural winery

MICROBIO

„I realized that I am not the freak. The real freak is the wine industry.“

Ismael Gozalo, heir to the fifth generation of winegrowers from Nieva in Segovia, writes his story about natural wine. His father, a pioneer in the bottling of Verdejo variety, left a legacy that Ismael passionately continues. Ungrafted vines of pre-Phyloxera Verdejo—along with Merlot, Syrah, Tempranillo, and Ruffeta—grow on a sandy soil enriched with clay, slate, limestone, and gravel. The pine forest that has grown around the vineyard protects it from the invasion of insects and diseases, and the vineyards, located between 800 and 900 meters above sea level, ripe in organic harmony without any interventions. The oldest of the vines is 270 years old and still boasts a vital condition. Following the biodynamic calendar, Ismael builds his art in a bottle, without added sulphites, using indigenous yeasts, without any filtering or clarification. The Ismael Gozalo line of wines represents a “classic” side with a minimal amount of sulphites, while the Microbio line explores creative freedom without added sulphites, reflecting the strength of tradition and innovation. Ismael Gozalo has faith in his passion, creating a magic that not only enamours palates around the world but also adds an entirely new dimension to the wine experience.
