„It is the energy in the wine that I am interested in. It’s all a matter of energy. If there isn’t any, it’s boring. I need to preserve nature’s energy. That is my job.“

The Nestarec family has a complex history of viticulture. Namely, in the 1980s, during the communist regime, their vineyards in the area of southern Moravia were seized, and only after the Velvet Revolution, they managed to return some land—more precisely, one vineyard—that Milan’s father cultivated and expanded over time. Today, the winery has 30 hectares at 13 micro locations, and is under the supervision of Milan, a man, first and foremost, and then a winemaker who greatly appreciates freedom and creativity. He cherishes being free from the obligation of having to fit into the precise mould of the regional style and replicating predictable wines, but rather enjoys the benefits of creative expression and experimentation. Along with such qualities, it often takes some courage, faith, and madness as well. Upon taking over the leadership of the winery from his parents, he decided to completely change its style, which resulted in the loss of all their customers. Therefore, the beginnings were not easy, but his persistence paid off because his wines are appreciated and recognized around the world today. His vineyards are cultivated organically, with the application of biodynamic preparations when he deems it necessary. However, he is not interested in the Demeter mark because he believes that awareness, observation, and a reaction in the moment are more important than following a strict set of rules. His relationship with the vineyards and wines, in which he seeks simplicity and energy, is of the utmost importance. His desire is simply to make wines, the way that he wants, without any tricks or adjectives.
